Bean and corn salad.

2 cans black beans rinsed and drained
1 package frozen corn
1 cup tomatoes
1 red pepper (I used yellow)
6 green onions chopped (used 8)
1 or 2 avocados (I put them in lime juice so they wouldn’t turn brown)

1/3 cup lime juice
1/2 cup olive oil
1 teaspoon sea salt
1 or 2 cloves of garlic
1 1/2 teaspoons cumin
Cayenne pepper to taste
Cilantro about 1/2 cup
1 teaspoon lime zest

I threw the dressing in my vita mixer, so it would blend better. I also used some fresh parsley in the dressing since I had it on hand.

Pour dressing over salad and mix, enjoy!
