3 scallions diced

½ small yellow onion

1 egg (optional)

½ cup peas

½ cup diced carrots

2 cups cooked long grain rice

grated fresh ginger

2 teaspoons of soy sauce

2 tablespoons of sesame oil

Place oil in heated pan

Add beaten egg cook until firm and mix up add onions, scallions carrots, ginger and peas in that order Sautee until almost soft add rice and Sautee 3 to 5 minutes stirring gently to mix ingredients. Add soy sauce and simmer a few minutes longer and serve.
