Quinoa is an ancient grain eaten in central and south America it is high in protein and easy to digest. It cooks quickly is higher in calcium than milk, is a good source of iron, phosphorous, B vitamins and vitamin E. Quinoa is a nutrient concentrated food. Quinoa is slightly warming and building food appropriate for everyone even the gluten sensitive.

1cup dry quinoa

2 cups filtered water

1/8 cup each, pine nuts, chopped walnuts, sliced almonds, diced dried apricots, currents

  1. Bring the water and Quinoa to a boil,
  2. cover and simmer, for 15 minutes,
  3. turn off heat and cover and let sit 15 minutes
  4. add chopped nuts and dried fruit
  5. refrigerate and serve as a refreshing summer salad
