1 bunch of Kale washed and chopped
1/2 cup of olive oil
1/2 cup of lemon juice
1/2 cup of chopped dried cranberries
1/2 cup of chopped nuts (walnuts or pine Nuts)
Toss everything together and serve. This salad is best served after a few hours to saute and keeps great for serial days, making it a great take for lunch item.
